BIG FLUFFY WAFFLES WITH MAPLE CREAM

BIG. FLUFFY. BELGIAN WAFFLES. These are the best gluten free waffles we’ve ever had! The texture is perfectly fluffy and the taste is reminiscent of funnel cakes at the county fair. The maple cream and berries take it to the next level. Zero dairy, refined sugar, or gluten, so you can feel good (literally) indulging for breakfast.

Take Note.

The waffle maker:

We both use Presto’s Ceramic Belgian Waffle Maker and love it! Cook the waffles for 5 min for a perfectly crispy outside and slightly doughy inside. If you want them more cooked go for 6 min.

The coconut milk:

These are best with a simple full fat coconut milk that has no added gums! We use Native Forest Simple Organic Unsweetened Coconut Milk. If you use a brand with added gums like Thai Kitchen (check the ingredient label) make sure to add an additional 1 cup water to the batter.

The batter:

Your batter should be pretty thick and doughy. Use ~1/4 cup of batter per “triangle” and make sure to spread it around using a spatula, to get even coverage.

Cook Time:

20 minutes

Serves:

3-4 people

(makes 5 halves)

1 serving = 1/2 waffle

For the Maple Cream.

Ingredients:

1 cup cashews

3/4 cup filtered water

1 Tbl vanilla extract

2 tsp cinnamon

4 Tbl maple syrup (add more to desired sweetness)

Directions:

Blend all ingredients together in blender until creamy and smooth.

For the Waffles.

Ingredients:

1 3/4 cup full fat coconut milk (No added gums. We use Native Forest Simple Organic)

2 eggs

1/2 cup coconut oil, melted

1 Tbl honey

1/2 tsp vanilla extract

2 cups Bob’s Red Gluten Free 1 to 1 Baking Flour

1 Tbl baking powder

1/4 tsp salt

Directions:

1. Preheat waffle maker. Do not grease if using ceramic.

2. In a bowl, whisk together all of the wet ingredients (eggs, honey, melted coconut oil, coconut milk + vanilla).

3. Add in dry ingredients (flour, salt and baking powder). Mix well to combine.

4. Use a heaping 1/4 cup to fill each of the four sections of your waffle iron. Use spatula to spread evenly.

5. Cook 5 min. (6 min if you like them more done).

6. Top with butter, maple cream and berries of choice.

7. Leftover waffles can be stored in the freezer. Pop them in the toaster to reheat.
